Q&A with Mike Halker of Due South Brewing

In anticipation of South Florida Beer Week we decided to ask Mike Halker the Founder and Head Brewer of Due South Brewing in Boynton Beach some fun beer-related questions:



What is your favorite style of craft beer?
IPA. Years ago when I had my first hoppy beer, I knew I was hooked.

If you were to sit down and enjoy a beer with any celebrity, who would it be?
Christopher Walken, because who wouldn't want to sit down and have a beer with Christopher Walken?

You have one day to brew with any head brewer from all over the world, who would it be and what style beer would you brew?
Matt Bryndleson from Firestone Walker and I would brew an American pale ale using some of the experimental hops coming out of Yakima, Washington.

What is your favorite craft beer/food pairing combo?
As I said, I like hoppy beers. Our Category 5 IPA paired with the Penang Curry from the Thai place down the street is one of my favorite meals.

What would your most epic 6-pack consist of?
With so many choices it would be impossible to pick just six. That's the great thing about craft beer; there's always an option for every situation.

Which event are you most excited about for SFBW?
Obviously Trench Day is a big day for Due South. Not only are we bringing out some great beers, but we are also getting dozens of rare finds from around the state.

Any advice for first-timers?
There is a wide range of flavors in the craft beer spectrum. If you don't like the first beer you taste, then you should try another one.
